I appreciate all the cooking you’ve been doing lately. Really. I think your ready for level two which is the secret of high heat and salt. Basically any vegetable: mushrooms, peppers, potatoes, broccoli, cauliflower,
lettuce, Brussels sprouts can benefit from a short-term relationships with roasting.
- Vegetable of your choice
- Olive Oil
- Kosher Salt
- Roasted Garlic (optional)
Set oven to 400F. Cut veg into bite-sized pieces (think around two dice big). Toss in a bowl and add olive oil and kosher salt until each piece is coated. Evenly spread out veg on a pan covered in tin foil. Bake until you can stick a fork into each piece easily; harder vegetables like potatoes and brussel sprouts will take longer than softer veg like peppers and mushrooms. Begin checking after 20 minutes or when you can smell them.
