Know all that chicken we bought this weekend? Let’s do something with it. Tonight, we are having Paleo Chicken Stir-Fry. Super easy.

Ingredients

  • 3 Chicken Breasts
  • 1 Bag of Bean Sprouts
  • 2 Small heads of Broccoli
  • 3 Peppers (Red in this case, but other colours would be fun too)
  • 1 can water chestnuts
  • 1 can mini corn cobs
  • Soy sauce (gluten-free)
  • Sesame oil

Instructions

Quickly rub chicken in olive oil and salt and maybe rub some roasted garlic on them too if you’re feeling fancy. Place in pyrex dish and bake at 350 for an hour. You have some time now before you have to chop, so maybe go work out? See you in thirty.

Now you’re gonna have to cut up some stuff. Start by rinsing the bean sprouts and getting them in our biggest frying pan. You’re gonna have a lot of veg to cook and these take the longest. Use the whole bag since we are eating sprouts instead of rice – like CHAMPIONS!

While that’s going, chop up the broccoli and add them to the pan. They’ll take a while too.

Next, cut the red peppers into little slices and add them to the pan. Drain both the mini corn and water chestnuts to add once all the veg look nice in tender. Chicken should be done shortly, slice it up and mix into veg when temperature of breast is 170F.

This is the complicated part – seasoning. Lets use soy and a bit of sesame oil. Add some of that roasted garlic in too. Stir it all around and we’ll have enough for dinner tonight and lunch tomorrow!
